Banana bread

Well well, another month has passed. Trying to get back on track is difficult for me right now. But I am not going to let a whole month pass between blogs. I’ve not been very active in the kitchen the last couple of weeks, school started, and my older baby started first grade this september. I just can’t believe how fast time goes around here.

This is a perfect treat to put in the lunch box. Both for you and your kids.

Recipe is for 1 loaf

1 Chia egg

75 g Sugar

75 g brown sugar

2 ripe bananas

100 ml oat milk

250 g plain flour

1/2 tsp baking soda

1/2 tsp salt

Start by making the chia egg, and let it sit for about 20 minutes. Then mash-up your bananas. Add oat milk. Next mix the sugar with the wet mixture. Last add dry ingredients. Mix until well combined.

If you want to you can add chocolate chips of a more cake like banana bread. I made two loafs one with chocolate and one with out. Both taste amazing!

Bake in a 180°C oven for 45-50 minutes. Keep your eye on it ’cause ovens can be different.

New Year already ?!

Hello everybody

Long time no blogging. I’ve been so busy lately its crazy. School, exams, christmas shopping, Christmas, and now finally I can blog a bit and update you guys. I’m sorry this is not going to be a recipe blog.

I did film November favorites, but then the SD card for the camera, did not allow me to export the footage in to iMovie so I could edit the video, but I could not upload it to YouTube ’cause the footage was still on the SD card. I was so pissed that I didn’t even try to do it again. Sorry about that.

I was going to film a New Years update video more on the personal notes. But the kids are still on their holiday of course. So I have not had any time. Dóri is already back to work after the christmas holidays. He is working the New Years this year. Someone has to right ? I’m trying to tell my self its going to be fine 🙂 So this will have to do for this years New Years update.

So this year was mostly very successful for the blog, I did drop out of school in February so then I had more time for the blog because I was staying home. I did upload something almost every week, for the whole year. But then in August I went back to school, but for another study. I dropped out of Nutrition Science in February and started Sport Science in August. So then I did not post as frequently. In October the school got really heavy. Lot of projects and group projects. Then of course the exams.

I am hoping to keep this blog going as successfully in 2016 as I did this year. I love blogging and making videos. This is such a great hobby. But this is a hobby, so I will always put my family and school first.

I hope you will keep on reading my blog. I have a couple of new recipes coming when the new year starts. A video is coming up first thing in January.

Thank you for this amazing year 2015. I would love to see more of you in 2016.

Chocolate peanut butter cookies

Hello everyone

My kids and I are getting down with some flu. After school I came home and searched youtube for something yummy.

So I made the Vegan Zombie Chocolate peanut butter cookies. I wanted something comforting for us after school.

They sounded so good. So I tried them. They are amazingly good.

Berry smoothie
