Asian inspired potato salad |Vegan

Hello my beautiful followers.

Today at lunch time I made this amazing asian inspired potato salad. It is very easy and with so much flavour.

The Icelandic local potatoes are arriving to the stores. So when Dóri went to the grocery store yesterday he bought some of the “specially picked” potatoes. They are so good.



Start by slicing your potatoes to your desired size. I sliced mine in to four pieces.

Season them, add olive oil, soy sauce, sliced jalapeños and grate a bit of fresh Ginger over everything .


Put them in to an oven safe dish and in to the oven for 20 minutes on 200°C

When you take them out add more jalapeño if you like to have some fresh and garnish with cilantro/coriander

You could also use some Chinese cabbage to lay under your potatoes for more nutrition and filling.


Recipe is for one serving.

350 g potatoes Yukon gold

1 sliced jalapeño

a coin size of fresh ginger grated

1 Tbsp olive oil

1 Tbsp soy sauce or Tamari sauce

1/2 tsp garlic powder

1/2 tsp smoked paprika powder

Coriander/cilantro for garnish.
