I hope you have had a wonderful easter so far. Dóri has been at work almost everyday since the kids started their easter brake. So I’ve just been playing with the kids and eating good food with his family.
But the other day we got vegan yogurt here in Iceland. The vegan/vegetarian community is going crazy to buy a lot so they will keep on importing it.
I went to the store yesterday morning and the kids picked up yogurt that they wanted and I made a frozen yogurt dessert from about one pot.
Recipe is for 2 people
For the crust :
3-4 fresh dates
1/4 cup of cashews
1/4 cup of pecans
1/4 cup of almonds
1/2 cup of oats
1/2 pot strawberry sojade yogurt
1/2 pot blueberry sojade yogurt
Fresh fruits or nuts or even shredded chocolate like I did
First I added all the ingredients for the crust into the blender until everything was well grounded but not like flour.
I used clean film to cover my dish so it would be easier to take it out of the dish. I used a small dish ’cause it was just for me and the kids. You can double up if you want to make it in a bigger dish.
Then I added the yogurt on top and kept it in the freezer for 2 hours at least.
You can add your topping before freezing if you are using shredded chocolate, but if you are using fresh fruits it’s not such a good idea.
When you are happy with the dessert, and you think it’s cool enough you can take it out of the freezer and slice it as you like and serve it.
I served mine with soy whipped cream and OMG you will like this. This dessert was just the simplest thing I could think of. I love the outcome. It’s easy and light in your stomach.
I hope you try this if they sell soy yogurt in your country.
