Curry Noodle Soup

Guys, I have nothing to say to apologize for how crappy I’ve been at blogging lately other than I’m sorry !

I’ve so not been in the zone for the month of January. I’ve just been eating cheap vegan food, like store-bought burger patty’s and stuff.

But now is a new month. New start right ?!

So the other day on Instagram I posted a picture of a curry noodle soup, and some of you like it,  so I take that as a YES I would like to see the recipe.

Here it is ! Are you ready?


This soup does not take a long time, but it’s not as simple as many of my recipes. But I know you can do it. Find everything you need and start cooking.


First up is to boil water for the noodles

Next is to cut your vegetables.

Heat up a medium saucepan and throw onion, garlic, ginger, chilli and celery in there, to start cracking. After 2-3 minutes everything should be soft and your Kitchen full of a good smelling onion. Add at this point, the curry powder. I normally use the McCormick one, but this time I decided to use a bit more fancy curry powder, but don’t worry in the end I added a bit of the McCormick one. I felt like it needed a bit of that.

Add the noodles to the boiling water, when they are ready you need to soak them in cold water, otherwise they will be very sticky.IMG_1648

Add the coconut milk to the saucepan and the vegetable cube. Let simmer for 5 minutes, add broccoli and let simmer again for 5 minutes.


Now is the fun part. Putting it all together. On top of the soup I add lime juice, cilantro and cashews. (optional)




Serves 2-3 people

200 g Rice Noodles

1 Tbsp Olive oil

1 yellow onion

2 cloves garlic

1-2 cm of ginger

half of a small chilli (optional)

1 stalk celery

2 Tbsp Curry powder(more if needed )

1  Vegetable cube

1 small head of Broccoli

1 can Coconut milk

Juice from 1/2 Lime

Cashews minced.

hand full Cilantro finely chopped

If you like Asian food you’ll not be disappointed
