This weekend I had the amazing opportunity to be someones godparent. My sister has a son that was born in October. This Sunday he was baptized. His name is Eiríkur Ívar. So beautiful. His name comes from his two grandfathers. Any way that’s not what I was gonna talk about here.
I baked a cake for the baptism.
Since I started this vegan/vegetarian lifestyle 2 years ago I have not baked a cake with milk or egg. I just like the vegan one better. This cake I made from a cupcake recipe from Chloe Coscarelli. I love her baking and cooking. So 2 years ago when I tried these cupcakes I thought this could easily be used for a cake to. So that’s what I did, I’ve made this recipe so many times.
On this pic I made one recipe and made two types of frosting in a cupcake form.
And this is similar to what I did this weekend. Simple but sooo good.
Cake , frosting, and some fruit on top. I have so many more pics and times I’ve made this. It’s vegan but you would never guess it !
So on to the recipe:
1 1/2 cup Flour
1 cup sugar
1/3 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup coffee (if making for children I use Rice milk or oat milk/almond milk if no one is allergic)
1/2 cup of vegetable oil/coconut oil.
2 Tbsp apple cider vinegar or another vinegar like white vinegar.
2 tsp vanilla extract.
This is so easy!
Mix all the dry ingredients together then mix all the wet ingredients together. Then you add the wet into the dry and stir. It’s done. Bake at 180°c for 12-15 min. This will take you less time then running to the store and buy a cake.
For the frosting I use the easiest thing you can find.
Some powdered sugar
some cocoa powder
a tiny bit of water or non-dairy milk
and stir til you get this thick consistency but still runny so you can pour it on to the cake when it’s ready.
Then you can but any fruit of your choice on top or not.
Cake on your table in 25 min! (okay maybe a little longer ’cause the cake has to cool a little before you put the frosting on)
