I decided to do a quick blog now about my favorite breakfast at the moment. I’ve been loving Chia seeds lately. I took a little bit of a break from chia over the summer for many reasons. But the main reason was better options of breakfast, watermelons, fresh berries and amazing smoothies. But now when the winter is here in Iceland. I’m back to porridge. Oats, chia and rice porridge is what is popular in my house right now.
Well the kids or not so much fans of the Chia porridge but they love their oatmeal. And if I’m lucky I can throw some chia seeds in when they can’t see for the nutritional purpose.
This is so quick in making that it’s funny almost:
2 Tbsp Chia seeds.
1 cup Almond milk
1 small mango cut into cubes.
Stir for a minute and let it sit on the counter for 10-15 minutes.
So what I do in the morning:
I wake up and wake up the kids. (If they did not wake me up 😉 )
I go to the kitchen I throw everything in the Tupperware and stir.
Dress the youngest and help the 4-year-old to get dressed.
Brush everyone’s teeth.
Dress the kids in outdoor clothing and my self of course.
Take the Tupperware to go and all our stuff and we leave the house.
The kids have their breakfast at daycare on week days.
Than I go to school my self.
Some mornings I can come back home to do my homework if school is not starting at 8 clock. Or study for the winter exams, they are coming soon, too soon. Like this morning I had my chia porridge and a Bai drink for breakfast.
Some mornings are less stressful than others. This one was very nice. Hope yours was good to. Have a nice day everyone.
